Done Squirreling

Well, I believe we are finished with all of our squirreling for the year, at least this little squirrel is. Phew!! We really got quite a bit canned and frozen for the year. Wes and I keep wondering if we would make it through the winter if we were pioneers. I think we just might. :) We were not the only busy squirrels this year. It seems that one of our fuzzy friends hid a little kernel of corn next to the drive way last year, and now we have a 6 ft corn stock growing just next to the porch. It's a happy little corn stock, with a whole two ears of corn that are tasseling and trying to get big and fat before a hard frost. One kernel of corn for two ears return - I'd say that was a pretty good investment on the part of our bushy tailed friends. Note the beautiful path in the background. It's getting the treatment this weekend with some hostas and lilies that I dug up from Mom and a few mums to boot.

The proof is in our freezer. Just under 100 quarts worth. Of course about 30 of these went to Mom and Dad's freezer otherwise we'd be wrapping these up for Christmas gifts come December and all of you might have found a slightly chilled present in your lap!!

And this last weekend we picked a rubbermaid full of apples from my Aunt Janet in Corning. We cooked down three big pots of apples into applesauce and got them canned for the winter as well. Almost all of them made it into applesauce, a few accidentally slipped into a very yummy (no calorie) apple crisp. :)
And here's our canned hide-a-way in the basement. All of those rows are four jars deep, and will taste so delicious in the middle of the winter when we're wishing it was summer again!!
